A California native (and Culinary Institute of America
graduate), Chef Vallery brings our farms to the table.
Using the freshest of seasonal Sonoma fare, Chef Vallery's
talent and award-winning creativity combine to deliver the
finest examples of regional cuisine for our culinary field trips.
Founder of Peloton Catering, Tim caters to many wine country notables, using Sonoma
farmers' markets as inspiration. A perfect pairing for our outings and events, we invite
